Visit the oldest ham drying and museum in the Alpujarra, registered in the I.G.P. Regulatory Council. Our wineries were founded in 1951, located in Trevélez (Sierra Nevada Natural Park), the highest town in Spain.

My name is Luis Jorge Vallejo Chica and I was born in 1951 surrounded by hams. Since I was a child, my father (Manuel Vallejo Prados) taught me the secrets to producing a good ham, and instilled in me a passion for this delicacy

Aware of the high quality of Trevélez Ham, Mr. Manuel Vallejo Prados founds Jamones Vallejo – Vallejo Hams-, creating the first Alpujarra ham dryer on an industrial level with a capacity of 30,000 pieces, being a pioneer in the Alpujarra.

Mr. Manuel starts with a small production and also cures hams for other people, and some delicatessens in the province of Granada. He takes two hams to keep a memory of his beginnings. Proud of his product, he adds his last name to his brand “Jamón Vallejo”, marketing them nationally, especially in Madrid, where they are highly appreciated for their low salt and high quality.

Mr. Manuel retires and passes the baton to his son, Luis Jorge Vallejo Chica, the second generation to receive the legacy of manufacturing hams. He implements many improvements in the production process by automating basic processes with a washing system, bleeding, formatting and transportation.

Aware of the potential of Trevélez ham, he strikes up conversations with other producers in the area. This is how the association of Trevélez ham producers was born, with the aim of creating a common purchasing center.

He participates in several ham competitions nationwide and obtains 5 awards in different categories, becoming the most awarded dryer in the Alpujarra.

The rules of the Trevélez Ham regulatory council are published in the BOJA, appointing Luis Jorge Vallejo Chica as president, a position he held for eight years.
2002
Jamones Vallejo presents a patent that radically improves the conservation of sliced hams and sausages.
2003
Due to the success of our hams the facilities have an expansion of more than 5,000 cubic meters to house nearly 80,000 hams.
2007
Jamones Vallejo begins the production of its signature ham “Vallejo Gourmet”.
2010
Cristina Vallejo Gómez, the third generation of ham masters, joins and makes her mark by creating Trevélez Selección.
2012
The first store in Trevélez is opened.
2015
Luis Jorge Vallejo and other producers create a book that includes the history of Jamón de Trevélez. To do this, he contacted Professor Juan González Blasco, a great expert in the history of Trevélez Ham, and presented a careful edition in two volumes with the most notable milestones of the prestigious Ham, having a great impact on the sector.
2016
Opening of a restaurant store in Trevélez that is complemented by guided tours of the dryers facilities.
